Rhubarb Bread/Muffins


 This is a recipe I got from my friend Sarah and you can do blueberries instead of rhubarb; in fact the original recipe is for blue berry muffins instead of rhubarb but I had rhubarb on hand so I tried it and it is really good!

 4 eggs
2 C. sugar
1 C. vegetable oil
1 t. vanilla 
4 C. flour
1 t. salt
1 t. baking soda
2 t. baking powder
2 C. (16 oz) sour cream
2 C. fresh rhubarb

In a large mixing bowl, beat eggs. Gradually add sugar. While beating, slowly pour in oil; add vanilla. Combine dry ingredients; add alternately with sour cream to the egg mixture. gently fold in rhubarb. Spoon into greased muffin tins or if doing bread put in a greased bread pan.bake at 350 degrees for 15-20 minutes.
