Microwave Chocolate Pudding

This is my great grandmas recipe. It is  really easy to make and even easier to eat!

3 Tbsp. cornstarch
2 c. milk
1/3 c. sugar
Large handful chocolate chips
1 tsp. vanilla

In a microwave-proof bowl, mix cornstarch and sugar; stir in milk. Add chocolate chips. Heat 2 or 3 minutes; stir. Heat until thickness desired. add vanilla and pour into small bowls.

Our Trip

We have been on a trip to Kansas, Texas, and Utah! As you probably guessed we were gone for a long time! Any guesses for how long? I will tell you in my next post. On our trip we visited both of my grandmas, had a lemonade stand, saw the Albuquerque balloon festival, and celebrated my youngest brothers birthday! when we got home yesterday we found out most of our chickens have been killed by an animal!:( It was heartbreaking! We had a lot of chickens but now we only have 9! We are glad to be home.

Chocolate Cream Pie

This is a really good recipe that I got from one of my favorite books, PIE by Sarah Weeks.
1 C. sugar
3 TBS. cocoa powder
1 pinch of salt
3 C. milk
3 egg yolks
1 tsp. vanilla
1 TBS. butter


In a saucepan combine the sugar, cornstarch, cocoa powder, and salt. In a separate bowl, beat egg yolks and milk.Add to saucepan and blend. Cook over medium heat, stirring constantly until mixture thickens. Remove from heat. Stir in vanilla and butter. Pour into a pricked, baked pie shell. Cool. Refrigerate. serve with whipped cream. Enjoy!
